Ingredients:
- 200g lion's mane mushroom, finely chopped
- 1 small onion, finely diced
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 2 tbsp mayonnaise
- 1 tsp mustard
- 1 tbsp lemon juice
- 1/4 tsp paprika
- Salt and pepper to taste
- Oil for frying
Instructions:
- In a skillet, sauté the lion's mane mushroom and onion with a little oil until they are soft and lightly browned. Let cool slightly.
- In a bowl, combine the cooled mushroom mixture with breadcrumbs, egg, mayonnaise, mustard, lemon juice, paprika, salt, and pepper.
- Shape the mixture into small patties.
- Heat oil in a skillet over medium heat. Fry the patties until they are golden brown on both sides, about 3-4 minutes per side.
- Serve the crab cakes with a side salad or dipping sauce of your choice, like tartar sauce or a simple aioli.
