Lion's Mane Crab Cakes

Ingredients:

  • 200g lion's mane mushroom, finely chopped
  • 1 small onion, finely diced
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 2 tbsp mayonnaise
  • 1 tsp mustard
  • 1 tbsp lemon juice
  • 1/4 tsp paprika
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. In a skillet, sauté the lion's mane mushroom and onion with a little oil until they are soft and lightly browned. Let cool slightly.
  2. In a bowl, combine the cooled mushroom mixture with breadcrumbs, egg, mayonnaise, mustard, lemon juice, paprika, salt, and pepper.
  3. Shape the mixture into small patties.
  4. Heat oil in a skillet over medium heat. Fry the patties until they are golden brown on both sides, about 3-4 minutes per side.
  5. Serve the crab cakes with a side salad or dipping sauce of your choice, like tartar sauce or a simple aioli.
