Lion's Mane Mushroom Vegan Tacos

Ingredients:

  • 300g lion's mane mushrooms, pulled apart into small pieces
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and black pepper to taste
  • 1 small red onion, finely diced
  • 2 cloves garlic, minced
  • 1 avocado, sliced
  • 1/2 cup fresh cilantro, chopped
  • Lime wedges, for serving
  • Corn tortillas, for serving
  • Optional toppings: diced tomatoes, vegan sour cream, salsa

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the pulled lion's mane mushrooms to the skillet and sauté until they start to brown and crisp up, about 5-7 minutes.
  3. Add the minced garlic, smoked paprika, ground cumin, and chili powder. Stir well to coat the mushrooms in the spices.
  4. Continue to cook for another 2-3 minutes until everything is fragrant and the mushrooms are well-seasoned. Season with salt and pepper to taste.
  5. Warm the corn tortillas in a dry skillet or in the microwave until they are soft and pliable.
  6. Assemble the tacos: place a scoop of the spiced lion's mane mushrooms onto each tortilla. Top with diced red onion, sliced avocado, and fresh cilantro.
  7. Serve with lime wedges for squeezing over the tacos and any additional toppings of your choice.
